Peri Peri Penne

Preparation time: 10 minutes
Cooking time: 20 minutes
Serve time: 1 minute
 

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 800g diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp oregano powder
  • 1 tbsp chilli flakes
  • 1 tsp piri piri seasoning
  • 1/2 tsp sugar
  • Salt & freshly ground black pepper
  • 400g penne pasta

Method:

  1. Heat the oil in a large frying pan over medium heat. Add the onions and cook, uncovered, stirring often, for 3 minutes or until it softens slightly. Add the garlic and cook, stirring, for 1 minute or until aromatic.
  2. Stir in the tomatoes and tomato paste . Increase heat to high and bring to the boil. Reduce heat to medium and simmer till the sauce reduces and thickens slightly.
  3. Stir in the sugar, chilli flakes, oregano and piri piri seasoning.
  4. Season to taste with salt and pepper.
  5. Meanwhile, cook the penne in a large saucepan of salted boiling water until al-dente. 
  6. Reserve some of the cooking water, drain and return to the pan.
  7. Add the sauce to the pasta and toss to combine with some of the cooking water till you achieve the perfect consistency.
  8.  Serve piping hot.
