Veg Biryani Recipe Process

  1. Rinse the rice thoroughly and soak it for 30 minutes in water.
  2. In a large pot, add 4 cups of water and the whole spices mentioned under “For the Rice” ingredients. Bring the water to a boil and add the soaked rice. Cook the rice until it is 80% done. Drain the rice and keep it aside.
  3. In another pan, heat the oil and add the cumin seeds. Once they crackle, add the thinly sliced onions and sauté until golden brown.

  6. Take a heavy-bottomed pot and layer the cooked rice and vegetable mixture alternatively. Start with a layer of rice, followed by a layer of vegetables, and so on. Top the final layer with fried onions, fresh coriander leaves, mint leaves, fried cashews, and raisins.
  7. Cover the pot with a lid and cook on low heat for 10-15 minutes until the rice is fully cooked and the flavours are well blended.
  8. Serve hot with raita or salad.
