Dum Aloo
Cooking time: 40 minutes
Ingredients:
- 2 Potatoes
- 1 Onion
- 1 tsp Ginger
- 1 tsp Garlic
- 2 Tomatoes
- 1 tbsp Cashews
- 2 tbsp cup Curd
- 2 tsp Kashmiri Chili Powder
- 1/2 tsp Haldi
- 2 tsp Coriander Powder
- Oil
- 2 Bay Leaves
- 1 Black Cardamom
- 2 sticks Cinnamon
- 1 Star Anise
- 1 tsp Jeera
- 1/4 tsp Hing
- 1 tsp Kitchen King Masala
- 1 tsp Garam Masala
- 1 tsp Kasuri Methi
Method:

Boil potatoes, peel them and prick them with a fork

Add curd, 1 tsp kashmiri chili powder, haldi, coriander powder and mix well

Heat 2 tbsp oil in a pan, add potatoes, salt to taste and sauté till golden brown and remove from the pan.

Add 2 tbsp of oil to the pan and bay leaves, black cardamom, cinnamon sticks, star anise, sautéing for a minute.

Add onion and sauté till slightly brown

Add garlic, ginger, cashews and sauté for 2-3 min

Add tomato and mix well. Cover and cook till tomato soften

Let the mixture cool down completely and blend it in a separate bowl

Add 1 tbsp oil, jeera, hing to a pan and add curd mixture, cooking for 5 min.

Add blended paste and cook till the oil separates.

Add kitchen king masala and mix well

Add water, salt, covering and cook till you reach perfect consistency

Add fried aloo and mix well

Add kasuri methi , garam masala , 2 tbsp cream and simmer for 2 minutes
