Ingredients

  1. Badshah ginger powder 
  2. Badshah Kashmir red chillies 
  3. Cumin 
  4. Coriander seed powder
  5. Badshah turmeric
  6. Cinnamon and cardamom (added to coax out their robust flavours)
  7. Fresh mango
  8. Salt
  9. Kalonji
  10. Badshah Hing
  11. Vinegar

Method

  • Peel Mango, grate it or slice it into small pieces. In a pan, heat a teaspoon of oil.
  • In low heat, add mustard, ginger, red chili powder, coriander seeds powder and Kalonji. 
  • Give it a quick stir.
  • Add grated mango, turmeric, salt and hing. Mix for a minute.
  • Sprinkle cumin seeds powder. Add powdered jaggery, and mix well.
  • The jaggery melts in the heat and becomes watery. Add vinegar now.
  • Cook covered for 5 mins on low flame.
  • It will be glossy by now. Cooldown and transfer to a clean jar.
