Ingredients:

  • 3 Potatoes
  • 1 tsp Ginger paste,

  • 2 cups Besan
  • 3 tbsp Rice flour

  • Oil

Method:

  1. To begin with, take a large bowl and add your potatoes, ginger paste, turmeric, chilli powder.
  2. Now add garam masala, chaat masala, salt and coriander.
  3. Mix well and Aloo stuffing is ready. Keep it aside.
  4. Take a large bowl and add besan, and rice flour.
  5. Now add turmeric, chilli powder, baking soda and salt.
  6. Additionally, add water and prepare a thick lump-free batter. Once done, keep it aside.
  7. Take 2 slices of bread and spread 1 tsp of green chutney
  8. Now spread 2 tbsp of prepared aloo stuffing evenly on it.
  9. Now place a thick slice of paneer on it
  10. Cover it with another slice of bread above it and cut it in half.
  11. Now, dip the stuffed bread in besan batter coating uniformly.
  12. Deep fry in oil, keeping the flame on medium.
  13. Fry both sides until the pakora turn golden brown and crisp.

2. Gujia 

Speaking of sweet dish names, Gujia is one of those celebratory sweets that really make you feel the festive atmosphere. They are a bit tricky to make but so satisfying when you get them right. Ingredients:

  • 1 tbsp Badshah Thandai Mix
  • ⅓ cup Dry Fruits
  • 1 cup Khoya
  • 1 tbsp Ghee
  • ⅓ cup Sugar
  • Pastry Sheet
  • Oil for frying

Method:

  1. Mix together the finely chopped dry fruits, ghee, koya, sugar, and thandai mix.
  2. Cut the pastry sheets into circles about 4 inches wide
  3. Place a tbsp of filling in the pastry rounds
  4. Seal the pastry with water and crimp the edges with a fork
  5. Heat oil till about 180 degrees celsius
  6. Gently place the Gujiyas in the oil and fry until golden brown
  7. Serve warm!

3. Shahi Paneer 

Shahi Paneer is the quintessential rich and creamy curry. It has it roots in Mughal cuisine but has quickly become a celebratory staple all across the nation. Even the name has royalty in it so you know it is a special food. Shahi Paneer makes for a diwali recipe because it is fairly simple and has a creamy gravy that can satisfy a bunch of hungry people.

  1. Add ghee and allow to heat. Once hot, add cumin seeds till they start to sputter
  2. Add green chillies, ginger garlic paste and onions. Saute on high while stirring frequently until the onions are translucent.
  3. Add tomato and cashew and saute for 3-4 minutes. Add salt and water and cook until the water reduces by half and the tomatoes have softened. Turn off the heat and keep aside.
  4. Allow it to cool and transfer to a mixer/blender once completely cooled down. Blend until smooth and set aside for later.
  5. To the same kadai add butter and allow to melt over medium heat. Add sugar and allow to caramelize, about 30 seconds. Add kashmiri red chilli powder, coriander powder and turmeric powder, Badshah Garam Masala and Paneer Butter Masala and fry for a few seconds or until the raw smell goes.
  6. Add the prepared onion tomato masala puree and salt and stir to combine. Allow the mixture to come to a boil, cover and reduce the heat to simmer. Simmer for 5-6 minutes or until the desired consistency is achieved.
  7. Add paneer cubes and cook for 1-2 minutes or until softened.
  8. Add cream and kasuri methi. Add more salt according to taste, if required. Stir to combine and serve hot along with naan, roti or rice!
