  • Peel Mango, grate it or slice it into small pieces. In a pan, heat a teaspoon of oil.
  • In low heat, add mustard, ginger, red chilli powder, coriander seeds powder and Kalonji. 
  • Give it a quick stir.
  • Add grated mango, turmeric, salt and hing. Mix for a minute.
  • Sprinkle cumin seeds powder. Add powdered jaggery, and mix well.
  • The jaggery melts in the heat and becomes watery. Add vinegar now.
  • Cook covered for 5 mins on low flame.
  • It will be glossy by now. Cooldown and transfer to clean jar.
